When the weather turns chilly, nothing warms the soul quite like a hearty beef stew. This recipe is perfect for a cozy night in, with tender beef chunks, hearty vegetables, and a rich, savory broth.
Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes
- 3 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, diced
- 3 cups beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper to taste
Instructions:
- Brown the Beef: Heat the olive oil in a large pot over medium heat. Add the beef cubes and brown on all sides. Remove and set aside.
- Sauté the Veggies: In the same pot, add the onions and garlic. Sauté until fragrant and translucent.
- Combine Ingredients: Return the beef to the pot. Add the carrots, potatoes, beef broth, red wine, tomato paste, thyme, salt, and pepper.
- Simmer: Bring to a boil, then reduce the heat and simmer for about 2 hours, or until the beef is tender.
- Serve: Enjoy your stew hot, perhaps with a side of crusty bread to soak up the delicious broth.
