Hearty Beef Stew: A Comfort Food Classic

When the weather turns chilly, nothing warms the soul quite like a hearty beef stew. This recipe is perfect for a cozy night in, with tender beef chunks, hearty vegetables, and a rich, savory broth.

Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 3 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. Brown the Beef: Heat the olive oil in a large pot over medium heat. Add the beef cubes and brown on all sides. Remove and set aside.
  2. Sauté the Veggies: In the same pot, add the onions and garlic. Sauté until fragrant and translucent.
  3. Combine Ingredients: Return the beef to the pot. Add the carrots, potatoes, beef broth, red wine, tomato paste, thyme, salt, and pepper.
  4. Simmer: Bring to a boil, then reduce the heat and simmer for about 2 hours, or until the beef is tender.
  5. Serve: Enjoy your stew hot, perhaps with a side of crusty bread to soak up the delicious broth.
